The Lanzhou Beef Noodles is a unique dish with is a culinary treasure of the Hui people of China. The Hui people are an ethnic group who are predominantly adherents of Islam distributed through parts of China, mainly in the north-western provinces of the country and the Zhengyuan region. There are approximately 20 million Hui people, the majority of whom are Chinese-speaking practitioners of Islam.
